Serves 2 and goes great with grilled chicken. We love using lemon pepper seasoning on the chicken.
Ingredients
For the salad
1 big ripe tomato, chopped
9 inches of cucumber, chopped
1/4 of an onion, chopped
1/4 c canned chickpeas
6 kalamata olives
Handful of arugula, chopped
1/4 c feta
1/2 avocado, cubed
1 roasted red pepper
2 tbs dry basil (or fresh if you have it!)
2 tbs dry oregano (or fresh if you have it)
Lots of fresh ground pepper and a couple shakes of salt
For the dressing
1/3 c red wine vinegar
1/2 lemon
1/4 c olive oil
1/4 tahini
2 cloves minced garlic
Chop all of the ingredients for a salad and add it to a mixing bowl.
Add all of the ingredients for the salad in a jar, put the lid back on and shake it. Put it on the salad and mix well. Enjoy!
